eat yr fiber!

I haven’t mentioned much of this here, my mum has been very sick for the last month with diverticulitis.  I’m mentioning this today as this disease is a perfect example at how poor the American diet has become.  Diverticulitis is definitely a lifestyle disease, due to lack of bulk and fiber in one’s diet.  My mother rarely eats veg nowadays because she relies on my stepfather for meals and he, after a long day at work, goes with what’s easy.  Also her years working as a registered nurse with funky hours have not helped matters either.  I will be down at the hospital on Tuesday when she has her surgery and I hope to get some info on what sort of diet she’ll be on as she heals.  As I’ve mentioned before I am putting in a convenient container garden for her and I think I’ll be sticking beans along side my corn this summer so she has a supply of organic, fresh legumes.  I plan to bring my crocheting with me, I’m attempting a market bag, but I will also be bringing my notebook to brain storm recipes and such that I can prepare and fill her freezer with over the summer so she has food at the ready.  Eat your fresh veggies people!  Eat plenty of bran, beans, anything!  Don’t let this happen to you.  I’m pretty scared right now, thanks in large part to her insurance company she had to wait several years until they deemed surgery necessary.  In this time it has worsened to the point that her bladder, spleen and a kidney are affected.  She may lose her spleen, there will be a urologist present in case there is troubles with her kidney and bladder.  Even pre-op is scary, but it’s a bit TMI so I’ll skip it, needless to say everyone is scared.  I had plans for a far better entry, more informative and such but my brain is just overloaded. I’m going to go dig.

So if you are so inclined please keep my mum in your thoughts this week.  Also big congrats to my sister Andi who is graduating Phi Beta Kappa, her ceremony is today.
